Warm choco hazelnut cookies with the ultimate melted gooey centre...yummmm!  GET THE RECIPE ⁠⠀

INGREDIENTS⁠⠀
120g almond butter⁠⠀
110g coconut oil (soft but not⁠⠀
melted)⁠⠀
150g coconut sugar⁠⠀
50ml almond milk⁠⠀
1/2 tsp vanilla powder/seeds⁠⠀
165g oat flour⁠⠀
1 tsp fine sea salt⁠⠀
1 tsp bicarb of soda⁠⠀
200g dark chocolate chunks⁠⠀
45g hazelnuts, chopped⁠⠀
Flaked sea salt (optional)⁠⠀
⁠⠀
METHOD⁠⠀
1) With an electric whisk, beat the almond butter, coconut oil and coconut sugar together⁠⠀
until light and creamy.⁠⠀
2) Add the milk and vanilla and mix to combine.⁠⠀
3) Sieve in the flour, salt and bicarb of soda and mix on slow until just combined.⁠⠀
4) Add the chocolate and hazelnuts and mix again until everything is evenly distributed.⁠⠀
5) Divide the cookie dough into 12 (about 2 tbsp per cookie) and roll into balls. Place on a⁠⠀
lined baking tray and refrigerate for 30 mins.⁠⠀
6) Meanwhile, preheat the oven to 180C and line 2 large baking trays with baking⁠⠀
parchment.⁠⠀
7) Once the cookie dough has chilled, transfer to the prepared trays, spacing well apart as⁠⠀
they will spread in the oven.⁠⠀
8) Bake the cookies for 12-14 minutes, the edges should be slightly darker and starting to⁠⠀
harden. Sprinkle with flaked sea salt if you wish.⁠⠀
9) Allow to cool on the trays...if you can resist!⁠⠀

Super simple salted peanut butter and vanilla cheesecake squares topped with gooey Million Squares! YUMMMM! GET THE RECIPE  ⁠⠀

BASE⁠⠀
1 1/2 cup oats⁠⠀
8 dates⁠⠀
1/4 cup milk⁠⠀
1 tbsp peanut butter⁠⠀
⁠⠀
CHEESECAKE⁠⠀
1 cup cashew nuts, soaked overnight⁠⠀
1 cup coconut milk, from a can ⁠⠀
2 tbsp coconut cream ⁠⠀
1/4 cup maple syrup ⁠⠀
1 tsp vanilla extract⁠⠀
2 tbsp peanut butter⁠⠀
⁠⠀
METHOD⁠⠀
1) Pulse your base ingredients in a blender or food processor⁠⠀
2) Push down into a lined small baking dish⁠⠀
3) Place in the freezer to set⁠⠀
4) Blend all your top layer ingredients and pour top of your base before placing back in the freezer to set. ⁠⠀
5) Serve with salted caramel millionaires, your favourite peanut butter or chocolate sauce on top. Deeeeelicious!

Is anyone else seeing all these photos on Instagram with the caption ‘instagram vs reality’ and you think to yourself ‘wow, that person’s “reality” looks so much better than I would with 100 Instagram filters?! And does it make you feel rubbish about yourself? Probably.

Last week I shared a photo of myself on a swing and told you how nervous I was to post it because I was insecure of how my body looked. Your comments and your support was overwhelming, and I realised how thousands of you are screaming out for more truths on social media.

So here I am today.  The reality of my Friday morning was that I had two glasses of champagne last night and I can only imagine that I feel how most of you would feel after 2 bottles! My face is puffy, my head is banging, my bags under my eyes are the blackest they have been in a while and I’ve got some serious flat bed hair. It’s definitely hard to show hundreds of thousands of people your face when you don’t feel your best, but why wouldn’t I?! You are my supporters. You all follow me because you love my brand, you know my story and you are a real person too. I’ll never be one of those who claims I’m showing you the reality of it all but actually have applied hundreds of filters and photoshopped my face. What you see is what you get here, and I couldn’t urge more people to be real on Instagram. People with large followings like me owe it to the community.  There are so many susceptible people on social media who may not even realise how bad they are made to feel about themselves by people claiming they are posting their reality when it is so far from that. I’m without a doubt one of those susceptible people too.

More people should share the truth on here. We have to love ourselves just as we are... with no make up, and no instagram filters. Here is my truth today... be brave today and show people your truth. Imagine if millions of people today just shared a selfie of their face in its most natural form. The first photo they take instead of perfecting it 100 times. It would be such a breath of fresh air to see actual reality being shared on Instagram rather than this fake ‘reality’ that is so dangerous. Let’s do it!!!! ️

INGREDIENTS (makes 7)⁠⠀

MUFFIN MIX⁠⠀
70g apple sauce (1/4 cup)⁠⠀
30g coconut oil (2 tbsp)⁠⠀
6g instant coffee powder (1 tbsp, mixed with 1 tbsp of water)⁠⠀
75g cashew butter (1/4 cup)⁠⠀
60ml maple syrup (1/4 cup)⁠⠀
200g ground almond (2 cups)⁠⠀
50g oat flour (1/2 cup)⁠⠀
A pinch of salt⁠⠀
⁠⠀
CHOC FROSTING (OPTIONAL)⁠⠀
1 avocado⁠⠀
15ml maple syrup (1 tbsp)⁠⠀
15g cacao powder (2 tbsp)⁠⠀
45g almond butter (2 tbsp)⁠⠀
A pinch of salt⁠⠀
⁠⠀
METHOD⁠⠀
1) Pre-heat the oven to 180°C/350°F.⁠⠀
⁠⠀
2) Melt the coconut oil and mix it with apple sauce, maple syrup, espresso and cashew butter.⁠⠀
⁠⠀
3) Add the ground almonds, oat flour and salt and mix until everything’s combined.⁠⠀
⁠⠀
4) Divide your mix between 7 muffin cases and smooth out the tops.⁠⠀
⁠⠀
5) Bake for 15 minutes and then leave them to cool in the tray.⁠⠀
⁠⠀
6) When your muffins have cooled start making your chocolate frosting. Add all of the ingredients into a blender and blend until you have smooth frosting (make sure you don’t have any unblended avocado pieces!).⁠⠀

7) Spread the choc frosting on top of each muffin. ⁠⠀

8) Store in the fridge in an air-tight container for up to 3 days.⁠⠀

CHOCOLATE CASE⁠⠀
200g dark chocolate⁠⠀

METHOD⁠⠀
1) Grab a silicone cupcake tray. Melt half the chocolate for the case and add a small amount to each mould so it covers the base and sides. Leave in the fridge to set.⁠⠀
⁠⠀
2) Mix the melted coconut oil and maple syrup for the cookie dough. Add the oat flour, ground almonds, choc chunks, vanilla powder and salt to the coconut oil and syrup and combine everything into a dough.⁠⠀
⁠⠀
3) Take the chocolate covered silicone tray out of the fridge. Put the dough inside each mould and press it down lightly so it’s compact.⁠⠀
⁠⠀
4) Blending all of the caramel ingredients in a food processor until it’s a smooth paste. spread on top of your cookie dough and smooth it out.⁠⠀
⁠⠀
5) Melt the rest of the chocolate and spread evenly over each cookie cup ensuring the top is covered. Leave in the fridge to set and then enjoy...yumm!

130g cashew butter (1/2 cup)⁠⠀
20g melted coconut oil (2 tbsp)⁠⠀
125ml maple syrup (1/2 cup)⁠⠀
170g porridge oats (2 cups)⁠⠀
A pinch of salt⁠⠀
Topping⁠⠀
100g melted chocolate⁠⠀
2 tbsp chopped nuts of your choice⁠⠀
⁠⠀
METHOD (MAKES 12)⁠⠀
1) Pre-heat the oven to 180 degrees Celsius/350 degrees Fahrenheit.⁠⠀
2) Mix all of the cookie ingredients in a bowl until they’re combined. Divide by 12 and shape into cookies.⁠⠀
3) Place the cookies on a lined tray and bake for 12 minutes until they’re golden. Leave them to cool completely before decorating.⁠⠀
4) Melt the chocolate on a low heat and dip each cookie in it. Place the dipped cookies back on the lined tray and drizzle the leftover chocolate on top of them. Sprinkle the chopped nuts on the chocolate and leave until the chocolate has hardened (they’ll have to be left in the fridge if the room is hot).⁠⠀
5) Enjoy straight away or keep in an airtight container for up to 4 days.⁠⠀

The fall is just part of the journey

I love this photo that my boyfriend took of me last night during our holiday. I went to post it today, and then fell culprit to the thoughts I know so many of you have... ‘Do I look nice enough in this?’ ‘Do my legs look all squished and big?’ and the negative thoughts went on... Immediately after I had all of these thoughts, I decided I needed to post it straight away. I want to ALWAYS ensure I am 100% real on here and that you see it how it is. That not only means that I show you the highs and all the lows of running a business but that I will never be one of those people who photoshops any photos of myself. What you see is what you get with me, and the brand. We will always be 100% transparent with you about everything.

Yes, I have insecurities about how I look sometimes, but I’m learning to love myself more and more and accept myself for who I am. We all only have one life and I refuse to spend mine being self- conscious about how I look. You know how much I looooove chocolate and treating myself, and if that means I never have a six pack and the most toned legs ever then I am totally cool with that.

I so hope all of you, especially the young ones following me, realise that all of us have insecurities, but we shouldn’t waste any time on them. We should NEVER compare ourselves to other people. So much of what we are shown on social media is not real. Filters are put on and highlights are shown. We all need to remember that! So many young women I meet tell me that they have so many insecurities about how they look and what they should be posting on social media in order to get the most likes. Please remember that the only important thing in life is that you like yourself, in fact that you love yourself and that you are loved in return.

The more love we have for ourselves, the more love we can give outwards. I’m learning to do it, and I hope all of you can try and bin all the negative thoughts and recognise how beautiful you are in your own individual ways ️

Living my best unicorn life 🦄

Treating myself to a long weekend in the sun. It took a lot of convincing from my friends and family that I should take a couple of day’s off and now that I’m here I realise how right they were. I work so hard on building a business that allows all of you to treat yourselves better, and in doing that I sometimes forget to treat myself at all.

When running your own business you can easily feel that there Is always  more to do, and no time to waste. I constantly feel this, but I also know that to be the most productive you have to give yourself some time off to rest and have fun. So here I am. Spending the whole day in the pool with all my amazingly supportive family around me. The dream ️ For anyone else who finds it hard to get away from work, I’m with you. But you need to force yourself. Burn out is a very real thing and that is what I need to avoid right now. Ive worked every single day since December and my body and my mind was starting to tell me I needed some time out. You need to remember to take some time for you and embrace every second of the you time. #bettertreatyourself (p.s...please don’t tell my 3 year old niece that it was me broke her special unicorn float. Seems when they say on the box from 2-7 years old they really mean it . I just REALLY wanted a turn!).

180g almond butter (2/3 cup)⁠⠀
250ml maple syrup (1 cup)⁠⠀
350g jumbo oats⁠⠀
1 tsp vanilla powder⁠⠀
A pinch of salt⁠⠀
145g frozen blueberries (1 cup)⁠⠀
⁠⠀
METHOD (makes 15 squares)⁠⠀
1. Preheat the oven to 180C.⁠⠀
2. Heat up the coconut oil, almond butter and maple syrup on a medium heat on the hob, whisking constantly until the oil is melted and everything is combined.⁠⠀
3. Add the oats, vanilla and salt and mix everything.⁠⠀
4. Add the frozen blueberries and mix again.⁠⠀
5. Put the mixture in a lined tin (24.5 cm x 17 cm) and even the surface.⁠⠀
6. Bake for 35 minutes until the top is golden.⁠⠀
7. When your flapjack has cooled down cut it into 15 pieces and store in an airtight container in your cupboard for up to a week.⁠⠀

There is no yummier way to celebrate summer than with these Dunx lollies! This recipe is so simple to make you won't believe it!! ⁠⠀
⁠⠀
As with everything we create, these are all natural, plant-based and gluten free ⁠⠀
⁠⠀
Makes 8⁠⠀
Ingredients;⁠⠀
1 can coconut milk (we use Biona)⁠⠀
1 tsp vanilla powder⁠⠀
125ml maple syrup⁠⠀
100g almond butter⁠⠀
75g dark chocolate⁠⠀
2 Dunx cookies⁠⠀
⁠⠀
You will need a popsicle mould and 8 sticks⁠⠀
Method;⁠⠀
1. Whisk together the coconut milk, vanilla and 60ml of maple syrup.⁠⠀
2. Pour the mixture into the popsicle moulds to a quarter full and freeze for 20 mins.⁠⠀
3. Mix the remaining 65g of maple syrup with the almond butter and spoon into the⁠⠀
moulds on top of the coconut layer. Reserve half of the almond butter mixture for the⁠⠀
next layer.⁠⠀
4. Pour a little more coconut mixture in so they are 2/3 full and place back in the freezer⁠⠀
for another 20 mins.⁠⠀
5. Repeat the process again, layering the almond butter first and finishing with the⁠⠀
coconut, until the moulds are full.⁠⠀
6. Insert your popsicle sticks and freeze for a minimum of 4 hours, preferably overnight.⁠⠀
7. Melt the dark chocolate and blitz or bash the cookies to a coarse crumb.⁠⠀
8. Remove the popsicles from their moulds, drizzle with the dark chocolate and sprinkle⁠⠀
over the cookie crumb. Enjoy!

Ingredients⁠
200g dark chocolate⁠
120ml maple syrup⁠
Pinch of sea salt⁠
2 tubs of your favourite Million Squares, chopped⁠
2 bags of Choc Brownie Nugglets, chopped⁠
100g peanuts⁠
70g dried cranberries (1/2 cup)⁠
⁠
Method⁠
1. Melt the chocolate. Once melted, add in the maple syrup and salt and stir until all ingredients are well combined.⁠
⁠
2. Take the saucepan off the heat and keep stirring until the temperature reduces.⁠
⁠
3. Stir through the dried cranberries, peanuts, Raw Millionaire Bites and Nugglets, making sure it is well coated in the melted chocolate.⁠
⁠
4. Pour the mixture into a lined brownie tin and place in the fridge to set for at least 4 hours.⁠

⁠⠀
INGREDIENTS⁠⠀
VANILLA SPONGE⁠⠀
160g cashew butter (1/2 cup + 1 tbsp)⁠⠀
250ml coconut milk (1 cup)⁠⠀
75g coconut oil (1/4 cup + 1 tbsp) + extra for greasing⁠⠀
280ml maple syrup (1 cup + 2 tbsp)⁠⠀
375g ground almonds (3 1/2 cups)⁠⠀
270g buckwheat flour (2 1/4 cup)⁠⠀
90g coconut sugar (3/4 cup)⁠⠀
3 tsp vanilla powder ⁠⠀
Pinch of salt⁠⠀
⁠⠀
STRAWBERRY JAM⁠⠀
400g fresh strawberries⁠⠀
1 tbsp chia seeds ⁠⠀ “CREAM”⁠⠀
400g vanilla Coyo⁠⠀
⁠⠀
METHOD:⁠⠀
1. Pre-heat your oven to 180C.⁠⠀
2. To make the sponge; heat up the cashew butter, coconut milk, coconut oil and maple syrup on a low heat on the stove. Whisk the mixture every now and then until everything’s combined.⁠⠀
3. In a separate bowl mix the ground almonds, buckwheat flour, coconut sugar, vanilla powder and salt. ⁠⠀
4. Add the wet mixture in to the dry and stir until everything’s combined. Pour it into 3 greased and lined tins (18cm/7).⁠⠀
5. Bake for 30 mins until golden.⁠⠀
6. For the jam; slice 200g of strawberries into small pieces. Put them in a pan and bring up to a boil on a medium heat. Leave to boil for 20 minutes until they’ve released a lot of liquid, stirring occasionally. ⁠⠀
7. Once thickened, take the strawberries off the heat and add the chia seeds. Mix until they’re well incorporated in to the strawberry jam and leave for 5-10 minutes to firm up.⁠⠀
8. With the rest of your 200g of strawberries, leave 8 to the side and then thinly slice the others which will then be placed in-between your cake layers.⁠⠀
9. Once cooled, put your bottom layer of cake on a plate and spread some vanilla Coyo on top of it. Add half the sliced strawberries on top of the Coyo and then place your middle layer on top. Spread out your strawberry jam on this middle layer and add the rest of your sliced strawberries.⁠⠀
10. Add your third and final layer on top of the strawberry jam one. Spread out the rest of your Coyo and cut your 8 leftover strawberries in half. Place them on top to decorate!

90g oat flour (3/4 cup)⁠⠀
105g brown rice flour (3/4 cup)⁠⠀
15g coconut sugar (2 tbsp)⁠⠀
A pinch of salt⁠⠀
70g chopped coconut milk chocolate⁠⠀
METHOD⁠⠀
1. Preheat your oven to 180C.⁠⠀
2. Heat the coconut oil and coconut milk in a pan on the stove until the oil has melted. ⁠⠀
3. Take the pan off the heat and add the hazelnut butter and maple syrup and whisk until everything’s mixed.⁠⠀
4. Add the oat flour, brown rice flour, coconut sugar and salt and mix until the it’s all combined.⁠⠀
5. Line your muffin tin with 10 muffin cases and fill them with 2/3 of the dough. Make a well in the middle and put the chopped chocolate in it. Cover the chocolate with the rest of the dough.⁠⠀
6. Bake for 15 minutes in the middle of your oven and then leave them to cool slightly, after that they’re ready to be devoured! ⁠⠀

TO MAKE 
1/3 cup Cashew Butter (85g)⁠⠀
1/2 cup Cacao Powder (60g)⁠⠀
1 1/4 cup Ground Almonds (120g)⁠⠀
1/2 cup Coconut sugar (60g)⁠⠀
1/2 cup Almond Milk (100ml)⁠⠀
1/4 cup Buckwheat flour (35g)⁠⠀
1/2 cup Maple Syrup (100ml)⁠⠀
1 pouch Salted Caramel Biccy Boms, cut into halves.⁠⠀
Pinch of sea salt⁠⠀
⁠⠀
1. Preheat the oven to 180C and line a brownie tin with baking paper.⁠⠀
⁠⠀
2. Add the cashew butter, maple syrup, almond milk, salt and coconut sugar to a bowl and mix well.⁠⠀
⁠⠀
3. Add in the cacao powder, ground almonds, buckwheat flour and fold the mixture. Make sure that everything is well mixed.⁠⠀
⁠⠀
4. Pour the mixture into the lined brownie tin and evenly place the halved Biccy Boms on top. Place in the oven for 20 minutes until cooked through but still fudgy. If you want them a bit gooier, bake them for around 18 minutes.⁠⠀
