These Prosecco Glaze Pink Doughnuts are nothing short of flavourful and fun. Give them a go for #NationalProseccoDay using the recipe below and find the ingredients in store. You ‘do-nut’ want to miss out .
INGREDIENTS
FOR THE DOUGHNUT:
120g coconut oil, melted, plus extra to grease
200g plain flour
120g caster sugar
1 ½ tsp baking powder
½ tsp bicarbonate of soda
65g desiccated coconut
240ml milk with 1 tbsp lemon juice
2 medium eggs
½ tsp vanilla & almond extract
3 tbsp frozen berries
FOR THE PROSECCO GLAZE:
150g icing sugar
70ml prosecco
Pink food colouring
Sprinkles/ sugar balls for decorating 
METHOD:
1. Grease the doughnut pan well with some coconut oil and preheat oven to Gas Mark 4/180C/160C Fan/350F.
2. In a large bowl, sift together the dry ingredients and set aside.
3. In a separate bowl or jug, whisk together the milk and lemon juice mixture and eggs. Stir in the vanilla and melted coconut oil.
4. Add the wet ingredients to the dry and stir very gently until just incorporated. Be careful not to overmix! Add in the frozen berries and stir gently until combined.
5. Pour the mix into a large disposable piping bag and snip off the end (a food bag also works fine). Pipe the mix into the doughnut pan and fill about halfway up.
6. Bake for 10-12 minutes until fully cooked and they spring back when you touch them
7. Allow to cool for a few minutes before transferring to a wire rack.
8. Repeat with another batch until all your batter is used up.
9. To make the glaze, whisk together the icing sugar, prosecco and food colouring. It should be thick enough to coat the back of a spoon. If it’s too thin, stir in more icing sugar.
10. Dip one side of each doughnut into the glaze and decorate with sprinkles.

This prosecco, strawberry and vanilla cupcake recipe is perfect for #NationalProseccoDay – light, fluffy, and fun. Plus, you get to drink the prosecco that’s left from making the frosting – a win-win . INGREDIENTS
FOR THE SPONGE:
200g caster sugar
200g margarine
4 eggs
200g self-raising flower
1 tsp baking powder
1 tsp vanilla extract
12 fresh strawberries
FOR THE FROSTING:
220g margarine
640g icing sugar
5-6 tbsp prosecco
METHOD:
1. Heat the oven to 190°C / fan 170°C / gas 5. Butter a 12 hole muffin tin.
2. Cream together the butter and sugar with electric whisk 
3. Add the eggs and mix.
4. Add the flour, baking powder, vanilla extract and continue to whisk together until everything is combined.
5. Divide the mixture evenly into the muffin tins and bake for 15-20 minutes.
6. Take out of the oven and transfer to a metal rack. While your cakes are cooling make your prosecco frosting.
FOR THE FROSTING:
1. Cream the margarine on its own for about 5 minutes on a medium speed.
2. Sift the icing sugar into the creamed butter and then mix together on a slow speed. Gradually increase the speed until it forms a thick paste.
3. Add the prosecco and whisk together for one minute. Set aside.
4. Cut a hole out of the centre of each cake and place a fresh strawberry into it. Make sure they are already washed, the green stalks are taken off and the top is sliced off.
5. Spread the frosting equally across the cakes.

You know what’s better than pork chops? Pork chops with roasted plums – yum . Sweet and salty mix perfectly together in this dish. Would you try it? Find the recipe below.

INGREDIENTS:
4 x 200g pork chops
2 tbsp olive oil
2 tbsp thyme leaves
1 red onion, sliced into 2cm wedges
600g ripe plums, sliced in half, seeds removed (4 large)
1kg potatoes, peeled and chopped
1/3 cup hot cream
1/3 cup hot milk
50g butter
1 clove garlic, crushed
150g baby spinach

METHOD:
1. Preheat oven to 180C. Place pork, 1 tbsp of oil, 1 tbsp thyme leaves in a medium bowl. Season with salt and pepper. Toss to coat pork. Heat a large non-stick frying pan over medium-high heat. Add pork, cook for 3 minutes on each side or until golden. Transfer to a plate.
2. Add remaining oil to frying pan. Stir in remaining thyme and onion. Cook until onion is tender. Set aside. Add plums, cut side down. Season with salt and pepper. Cook for 1 minute or until golden.
3. Transfer plums, onion, pork and cooking juices to a roasting pan. Cook in pre-heated oven for 7 to 10 minutes or until pork is cooked to your liking and plums are tender.
4. Boil or steam potatoes until tender. Drain well. Return to pan. Add cream, milk and 25g butter. Season with salt and pepper. Mash until smooth. Heat the remaining butter in a frying pan over a medium heat. Add the garlic and spinach. Cook, stirring until just wilted.
5. Serve pork and plums with mash and spinach on the side.

INGREDIENTS:
5 medium egg whites
250g golden caster sugar
100g chopped hazelnuts
6 plums, halved and stoned
2 tbsp light brown sugar
Juice of 1 orange
250ml double cream, lightly whipped

METHOD:
1. Preheat the oven to 140°C, gas mark 1. Line a baking sheet with baking parchment and, using a plate or pan lid as a template, draw a 28–30cm circle on the parchment with a pencil. Turn the paper pencil-side down. 
2. In a clean bowl, whisk the egg whites with an electric mixer until stiff, then add the caster sugar a teaspoonful at a time, mixing well between each addition, until really stiff and glossy. Fold in the chopped hazelnuts. 
3. Using the pencil circle as a guide, spoon the meringue onto the baking sheet in 12 spoonfuls that just touch to create the wreath shape. Make a shallow hollow in the top of each one with the back of a spoon. Bake for 1¾–2 hours until pale golden and crisp. Turn off the oven and leave the meringue inside to cool completely, then remove. 
4. Preheat the oven to 180°C, gas mark 4. Place the plum halves in a shallow dish or roasting tin. Scatter with the brown sugar and drizzle with the orange juice. Cook in the oven for 15–20 minutes until the plums are tender. Leave to cool. 
5. Transfer the meringue wreath to a board or flat plate, or prop up as a centrepiece. Serve topped with the whipped cream and plums.

INGREDIENTS:
4 large beetroots (about 500g), peeled, ends trimmed, cut into wedges
Little gem lettuce
1 tbsp olive oil
4 ripe plums (about 200g), cut into wedges
60g walnuts
1 small pack mint, leaves picked, some reserved for garnish
For the dressing:
1 ½ tbsp extra virgin olive oil
½ tbsp vinegar

METHOD:
Heat oven to 200C/180C fan/gas 6. Toss the beetroot in the olive oil and some seasoning in a roasting tin then spread out into an even layer. Roast for 15 mins until tender.
While the beetroot is roasting, combine the dressing ingredients together in a jug with a little seasoning.
To assemble the salad, toss the rest of the ingredients in the roasting tin with the cooked beetroot and dressing. Serve on a sharing platter, garnished with a few reserved mint leaves.

INGREDIENTS:
156g of all-purpose flour
300 grams of butter, cold and cubed
2 to 4 tablespoons of ice cold water
Flaked Almonds
1/4 teaspoon of salt
2 teaspoons of sugar 
FOR THE FILLING:
455g plums
150g sugar (or to taste)
2 tablespoons of flour
Zest of 1 lemon
Egg wash and crust topping:
1 large egg
1 tablespoon of cream

METHOD:
Pie crust:
1. In a food processor blend together the flour and butter until the mixture forms bean-size pieces. Slowly add ice water, 1 tablespoon at a time, and pulse until the dough just comes together. It should be moist, but not wet.
2. Put the dough on the lightly floured counter and pat it together to make one uniform piece. Flatten into a disk, wrap in plastic and chill for 2 hours.
3. Heat the oven to 180 degrees Celsius. Roll the dough out to a 12-inch (30 cm) round. Using a round cap or pastry cutter (about 3 inches in diameter) make cuts. Transfer to a rimmed baking sheet lined with parchment paper and chill while preparing the filling.
Filling:
1. Toss together plums, the lemon zest, and the flour. Pile fruit in the dough circle, leaving a 1 1/2-inch border. Again, imperfect is totally fine. Brush the crust generously with one beaten egg and heavy cream. Sprinkle sugar on the crust and top with flaked almonds.
2. Bake for 35 to 45 minutes, until the filling bubbles up vigorously and the crust is golden. Cool for at least 20 minutes. Serve warm or at room temperature.

METHOD:

128g basil
2 limes, sliced
1 bottle chardonnay
710ml sparkling water or soda

METHOD:
1. Prep the fruit. Leave the peels on while slicing the oranges and lime. Add the fruit, lime and basil to a pitcher.
2. Pour wine over the fruit and give it a stir.
3. Refrigerate for at least 3-4 hours or preferably overnight. The taste will intensify and get better as it sits in the fridge. When you are ready to serve, pour in the sparkling water or soda. Serve immediately.

INGREDIENTS:
1/2 stick unsalted butter, softened
96g brown sugar
1 egg
1 tsp vanilla
A drop of almond extract
Pink gel food colouring
187g flour
1/2 tsp baking soda
1/4 tsp salt
100g fresh cherries (plus extra for garnish)
96g chocolate chips (plus extra for garnish) 
METHOD:
1. Preheat the oven to 180ºc.
2. In a mixing bowl beat the butter and brown sugar with an electric mixer for 1 minute, or until combined. Add in the egg and extracts, beat again.
3. Add in a small amount of pink gel food colouring and mix. In a separate small bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to wet ingredients, mixing by hand with a spatula.
4. Add in the chopped cherries and chocolate chips, mix by hand until combined. The batter will be thick.
5. Use a cookie scoop to drop dough balls onto a non-stick baking sheet. Press additional cherries and chocolate chips into the outside of the dough balls.
6. Bake for 14-16 minutes - be sure not to over bake or the cookies will lose their pink colour and turn brown.
7. Allow the cookies to cool to the touch on the baking sheet (about 15 minutes) then move them to a cooling rack.

1. Stone the cherries then put them into a pan with the sugar, flour, vanilla, cinnamon and lemon juice.
2. Heat over a medium heat for about 15 minutes, gently stirring.
3. When the sauce has thickened, remove from the heat and allow to cool fully.
4. Preheat oven to 180C.
5. Line the bottom of a pie dish with half of the pastry.
6. Add the cold cherry filling.
7. Top the pie and cut heart-shapes into the pastry.
8. Brush with beaten egg.
9. Bake for about 1 hour until cooked through.

METHOD:
Heat the grill to its highest setting. Cut the ciabatta into 12 slices, then brush each slice on both sides with a little extra virgin olive oil. Grill the bread for 2 mins each side.

INGREDIENTS:
96g cherries pitted and sliced in half
1 tsp maple syrup
Splash water
250 ml coconut milk (to make cream, refrigerate overnight, skim off the cream from the top and then whisk in a bowl until creamy)
2 tbsp organic coconut oil
2 tbsp maple syrup
1/2 tsp vanilla powder or essence
100g bar Moser Roth Luxury Dark Chocolate – 70%
2 tbsp raw cacao
1-2 tsp Alcafé Roast & Ground Coffee – Classic House 
METHOD:
Add the cherries to a saucepan with the maple syrup and water, heat on a medium heat for a few minutes until the cherries have softened. Set aside.
Now break up the chocolate and add to a large bowl.
Heat the coconut cream, coconut oil, maple syrup & vanilla in a saucepan until just before boiling. Stir constantly.
Pour the mix over the chocolate and leave for a few minutes to allow the chocolate to melt.
Fold in the raw cacao and coffee and stir gently so that everything is combined. Now fold in the cherries.
Spoon the mix into glasses or espresso cups then pop in the fridge to firm up – around 4hrs or overnight.

There’s so many ways to use cherries when they’re in season . Here’s one we bet you haven’t tried before… Grilled Steak with Balsamic Cherries 🥩. The contrast of sweet and savoury is delicious. See below for the recipe. Will you be trying it this summer? 
INGREDIENTS:
Two 8- to 10-ounce strip steaks (1-inch thick)
Salt and pepper
2 tbsp extra-virgin olive oil
120ml balsamic vinegar
64g cherries, sliced in half and pitted
142g baby rocket
½ small red onion, thinly sliced
57g feta, crumbled 
METHOD:
1. Remove the steaks from the fridge and allow them to come to room temperature.
2. Preheat a lightly oiled grill (or grill pan) over high heat.
3. Season the steaks very generously on both sides with salt and pepper. Place them on the hot grill and cook for 3 minutes per side.
4. Transfer the steaks to a cooler part of the grill (or reduce the heat on your grill pan to medium) and cook for another 3 minutes or so per side for medium rare. Transfer the steaks to a cutting board and let them rest for 10 minutes to allow the juices to redistribute, then slice them thinly against the grain.
5. While the steak is resting, heat a large skillet over medium-high heat. When the oil is hot and shimmering, add the cherries and cook for about 3 minutes, shaking the pan occasionally, just until the fruit begins to soften.
6. Add the balsamic and reduce the heat to medium. Cook for about a minute just until the balsamic has thickened slightly. Remove from the heat.
7. Add the rocket to a large bowl or serving platter. Toss the greens with a pinch of salt. Top with the red onion, steak, and cherry dressing.
8. Sprinkle with cheese and serve.

Cheesecake Stuffed Strawberries? Now that’s a combo we can get behind . They’re quick and easy to make, so are a great summer party finger food. Find the recipe below. Do you like the sound of these? 
INGREDIENTS:
24 large strawberries, hulls removed
680g cream cheese, room temperature
1.5 tsp vanilla
32g, plus 2 tbsp sugar (add gradually, to taste)
32g cracker crumbs 
METHOD:
Place cream cheese in a bowl and microwave for 30 seconds, or until soft. Use an electric mixer to combine the cream cheese, vanilla, and sugar. (Add the sugar gradually).
Use a sharp knife to make a hole in the centre of each strawberry (going as deep as you can without hitting bottom).
Spoon or pipe the filling into each hole.
Sprinkle cracker crumbs on top.

Need an elegant and tasty appetizer for your summer soirée? Look no further than this Strawberry Balsamic Crostini. The perfect mix of sweet and savoury, will you be giving it a whirl? Find the recipe below. 
INGREDIENTS:
340g fresh strawberries
128g ricotta (or any cream cheese)
2 tbsp finely chopped basil leaves
1 tbsp finely chopped chives
1 French baguette or similar, cut in ½ inch thick slices (8-10 slices)
2-3 tbsp balsamic vinegar
60ml honey
Salt and pepper to taste 
METHOD:
Cut strawberries into slices. Set aside. In a small mixing bowl combine ricotta, basil and chives. Stir to combine thoroughly then set aside.
Toast the bread until golden brown.
Assemble crostini by layering each piece of toast with the herbed cheese and sliced strawberries. Add a drizzle of honey and balsamic vinegar and sprinkle with salt and pepper. Garnish with snipped chives and chopped basil before serving.

This wonderful summer salad is full of colour and goodness. With fresh peas, broad beans, strawberries and goat’s cheese, it’s ideal for a delicious al fresco dish. See below for the recipe. What do you put in a salad? 
INGREDIENTS:
225g fresh peas, podded (reserve some opened in pod for garnish) or use frozen petit pois, defrosted
225g fresh broad beans, podded or use frozen, defrosted
Handful of fresh mint leaves, half finely chopped, half left whole
Extra virgin olive oil
400g punnet of strawberries, hulled and quartered (reserve a few with leaf intact for topping)
120g soft goats’ cheese, cut or broken into small pieces
Handful of fresh basil leaves 
METHOD:
Add the fresh or frozen broad beans to a pan of boiling salted water and cook for about 3-5 mins, add peas for the last 2 minutes, drain well and leave to cool.
Add the olive oil and chopped mint to the peas and broad beans and season with a pinch of salt and black pepper and toss well to coat.
Add the quartered strawberries and gently toss together, transfer to a large salad bowl then top with the goats’ cheese, basil leaves, remaining mint leaves and then top with remaining strawberries.

It’s #WorldChocolateDay and what better way to celebrate than with a deliciously indulgent Frozen Hot Chocolate?  Find the recipe below. Who’s the biggest chocolate lover in your family?

INGREDIENTS:
85g of chocolate
2 tsp hot chocolate mix
1 1/2 tbsp sugar
355ml milk
1 pint of ice
Whipped cream
Chocolate shavings

METHOD:
1. Chop the chocolate into small pieces and place it in the top of a double boiler over simmering water, stirring occasionally until melted. Add the cocoa and sugar, stirring constantly until thoroughly blended.
2. Remove from heat and slowly add a quarter of the milk and stir until smooth. Cool to room temperature.
3. In a blender place the remaining cup of milk, the room temperature chocolate mixture, and the ice. Blend on high speed until smooth and the consistency of a frozen daiquiri. Pour into a giant goblet and top with whipped cream and chocolate shavings. Enjoy with a spoon or a straw.

Is there anything more refreshing than a Peach Ice Tea on a hot day? We think not.  Make it yourself and take to a summer #picnic. Find the recipe below. 
INGREDIENTS
3 ripe peaches, thinly sliced
64g granulated sugar
1.7L water, divided
1.5 tbsp loose leaf tea or 2 tea bags (black or green tea) 
METHOD
1. In a medium saucepan, combine the peaches, sugar and water. Bring to a boil over high heat. Lower heat to medium-low and simmer for 30 minutes. Every 5 minutes, stir and crush peaches into the mixture.
2. Pour the peach mixture into a blender and puree until smooth. Pour the peach puree through a sieve or fine mesh strainer to strain out the peaches. Pour into pitcher and set aside.
3. Bring remaining 6 cups of water to boil in a medium saucepan. Remove from heat, add the tea and brew according to package directions (approximately 4-5 minutes). Once brewed, strain out the tea leaves or remove the tea bags and transfer to the pitcher. Stir to combine and refrigerate until cool.
4. Once cool, give the mixture a stir, add ice cubes, peach slices and serve.

How delicious do these mini Mint Chocolate Tarts look?  An indulgent #vegan dessert perfect for summer parties that’s sure to impress your guests. We bet some people will be taking more than one… Find the recipe below. 
INGREDIENTS
FOR THE CRUST
1/2 cup raw almonds
1 cup shredded coconut
1 cup of sultanas
3 tbsp cacao powder
2 tsp pure vanilla extract
Small pinch of sea salt
FOR THE FILLING
1 1/2 cups raw cashews, soaked for at least 3-4 hours
1/2 cup packed fresh mint leaves
5 tbsp full-fat coconut milk
1/4 cup maple syrup
3 tbsp melted coconut oil
1/2 tsp pure vanilla extract
FOR THE TOPPING
40 g. or 1/2 bar Moser Roth Dark 70% Cocoa 
METHOD:
FOR THE CRUST
Place the almonds in a food processor and pulse until it starts to form a coarse flour. Add the shredded coconut, sultanas, cacao powder, vanilla extract and salt. Blend until it forms a thick paste. It should be sticky and should hold together when pinched. If it's too dry, add some more sultanas.
Press into the bottom of five mini tart pans (or 10-12 muffins tins). Set aside in the fridge while you prepare the filling.
FOR THE MINT FILLING
Half fill a medium bowl with ice and top up with cold water. Place mint leaves in a mesh strainer. Pour boiling water over the mint to wilt the leaves, holding the strainer above the sink, and then immediately transfer the wilted leaves into the ice water bath to shock. Promptly drain and squeeze the water from the mint.
Place the blanched mint leaves and all the remaining filling ingredients into your blender and blend until you get a smooth and creamy consistency. Taste and adjust sweetness if needed.
Remove the tart crusts from the fridge and scoop filling onto the crusts. Put the tarts back in the fridge.
FOR THE TOPPING
Melt the dark chocolate in a small saucepan. Remove the tarts from the fridge again and drizzle the melted chocolate on top of each tart. Set back in the fridge to set for at least 30-40 minutes.

5 - 6 slices of bread (quartered)
Olive oil
2 eggs
1/4 pack of coriander leaves (chopped)
1 white onion (chopped)
3 green chillies
Salt 
METHOD:
1. Grind the onion and coriander leaves into a smooth batter with egg, green chilli and salt.
2. Heat oil in a pan. Once the oil is hot, reduce the flame.
3. Dip the slices of bread into the batter and place it to the hot pan.
4. Shallow fry until both sides of the bread become crispy.
5. Remove the bread from pan and keep it in a paper towel to soak up the excess oil.
