Review: Heard great things about this place so I wanted to try it out. There was a line coming out the door but the wait wasn’t too bad, at most only 15 minutes. We ordered at the cashier and I got their homemade raspberry sweet tea which was $4-5. It was good but also quite sweet. Once we grabbed our sauces we found a table and the food didn’t take long at all. There was a lot of food on the plate and I couldn’t wait to dig in. Everything went so well with Tabasco sauce and ketchup. I ended up taking food to go also. We will be back!!

This homemade Pad Thai was definitely appe-Thai-zing  dEATS: follow instructions on the package for how to cook noods. I used @anniechunsinc pad Thai rice noodles. Meanwhile, chop up your favorite veggies 🥬 I used red bell pepper, shiitake mushrooms, and pak choy. Lastly, whip up a homemade peanut sauce:
1/2 cup creamy peanut butter
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp rice vinegar 
2 tsp powdered ginger
2 tsp maple syrup or plain sugar
3-4 tbsp Water to adjust consistency 
Sriracha to taste (optional)
Mix the ingredients for the sauce and pour it onto your rice noodles and veggies.

️ There is clear research to show that a protein + carbohydrate duo is far more beneficial for recovery than just protein alone, or carbohydrate alone. So ensure you pair these two micronutrients together for your next post workout meal. Think; eggs on toast, fruit smoothie with protein powder or some lean meat with roasted veggies⁣⁣⁣⁣⁣

⁣⁣️ carbohydrate is of even greater importance post exercise for endurance athletes as opposed to strength (weight lifting athletes)⁣⁣⁣

So fueling up before can be just as beneficial (for those who struggle to eat afterwards). And for those wanting to gain muscular strength and size, consuming a meal 1-2 hours before exercise will certainly help maximise performance. ⁣⁣⁣⁣⁣

️ Eating soon (30-60mins) after intense workouts will improve ongoing performance. So, if you like to train multiple times per week be sure to refuel as soon as you can to keep the workouts going strong all week long ‍️ ⁣⁣

️ All in all... try to eat a balanced meal (protein, fat, carb) after intense workouts within an hour or so. It’s not the end of the world if you don’t, however you may find yourself more fatigued the next day, paired with poorer recovery + performance. And, if you’re looking to gain strength and muscle mass - try to avoid skipping meals (pre + post exercise) at all costs! ⁣⁣🥑

How To⁉️
▫️Evenly spread some pizza sauce onto each mini naan. Then add a small slice of mozzarella cheese. Chop up some onion & add that on top as well.
▫️I used my toaster oven to cook the pizza bites since there were that many but you can also use a oven. Set to 350° & cook for 5-6 mins (until naan looks brown & cheese has started to melt)
▫️Sprinkle with some red crushed pepper!

▫️2 Large Whole Wheat Tortilla (@missionfoodsus)
▫️1 Cassava Flour Tortillas (@sietefoods)
▫️Plain Skyr Yogrut (@siggisdairy)
▫️Chopped Veggies - Onion, Mini Sweet Peppers, Cherry Tomatoes, Baby Spinach
▫️Refried Black Beans
▫️Queso (@sprouts)
▫️Mexican Shredded Cheese
⠀⠀⠀⠀⠀⠀⠀⠀⠀
How To⁉️
▫️Preheat oven to 425°.
▫️Lightly coat your small Cassava tortilla with avocado oil on both sides & bake in the oven for 3 mins each side. You have a tostada!
▫️Then spread a layer of yogurt (or sour cream) and top with your veggies.
▫️Cut a large square from one of your whole wheat tortillas. Save the scraps to make some chips for later! (Same method as tostada).
▫️Before turning on the stove, in a pan, layout your large whole wheat tortilla. Spread a layer of beans & queso right in the center, about the size of your tostada.
▫️Then place your loaded tostada right in top. Place the square tortilla & carefully start to fold in the sides of the large wheat tortilla, holding it in place with one hand.
▫️Turn stove on and flip your crunch wrap so the folds are facing down. Let it cook for 3-4 mins to seal it in & get toasty. Cook on the other side for another 2-3 mins.
▫️Slice in half & serve with some cubed avocado, Doña salsa (@tacodeli - lately been obsessed ), & fresh cilantro.

 Protein Packed Taco
⏲ Under 15 Mins | Serves 1
My dinner from last night after a tough BodyPump class  It’s so important to replenish your body after a workout regardless of what time you go to the gym! 🤷‍️ I made myself this protein-filled taco with a sunny-side up , purple sweet potato hash , & some leftover tofu sofritas 
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Deets
Sofritas:
▫️2/3 14 oz Extra Firm Tofu (@wholefoods)
▫️1/3 cup Diced Tomatoes
▫️1/3 Yellow Bell Pepper
▫️1/4 Onion
▫️2 cloves Garlic
▫️1/3 cup Vegetable Broth
▫️1 tsp Rice Vinegar
▫️Spices (to taste) - Cumin, Chili Powder, Cayenne, Salt & Pepper
Taco:
▫️1 Cassava Flour Tortilla (@sietefoods)
▫️1 Sunny-Side Up Egg (@vitalfarms)
▫️Purple Sweet Potato, cubed
▫️Tofu Sofritas
▫️1/2 Avocado, sliced
▫️Baby Spinach
▫️Habanero Sauce (@yellowbirdsauce)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
How To⁉️
▫️Start off by wrapping your tofu in some paper towels & pressing it between two plates. This will release any excess water. Let it sit for 15 mins.
▫️Meanwhile, in a food processor, add in all the remaining ingredients for the sofritas. Add the spices to taste. I wanted it spicy so I added lots of chili powder & cayenne. Blend until finely chopped. Empty out into a bowl.
▫️Once your tofu is ready slice into thinner strips & add to a pan with EVOO. Season with salt & pepper. Cook until brown on both sides.
▫️Add tofu to your food processor & pulse until crumbled but not puréed. Then add your crumbled tofu to the marinade bowl. Mix & let it sit for 15-20 mins.
▫️Now all you need to do for your sofritas is add it to a cast iron skillet with some EVOO & cook for roughly 5-6 mins. Cover with a lid if you have excess water to help it quickly evaporate.
▫️Cook your purple SP hash in EVOO & season with your spices.
 Warm your tortilla & top with some spinach & your egg. Add your sofritas & purple SP. Add more spinach & your avocado to the side. Finally, drizzle on some Habanero hot sauce.

How To⁉️
▫️Roast your sweet potato for 45 mins at 425°.
▫️Add all the wet ingredients in your blender (@ninjakitchen) & blend on high.
▫️In a mixing bowl, add in all the dry ingredients & mix evenly. Then pour in your wet ingredients. Fold everything in together. Make sure there aren’t any lumps.
▫️Heat up your waffle iron (I used my @osterkitchen iron & I didn’t need to spray it down). Scoop out the mixture & cook it on medium-high for crispier waffles.
▫️Top waffles with plain Greek yogurt (@siggisdairy - use a DF option to be paleo), strawberries, blueberries, raspberries, Monkfruit Maple Syrup (@lakantosweetener), walnuts, & hemp seeds (@manitobaharvest) 🤤

It’s been a while since I’ve had pasta & I was craving it BAD yesterday  Whipped up this super tasty & healthy pasta for lunch yesterday  Heading to the river this morning to go tubing with my bffs  Lets see how badly I get sunburned 🥴

▫️1 box Chickpea Pasta (@eatbanza)
▫️Beet & Basil Pesto (@jargoods)
▫️Broccoli Florets
▫️4-6 Mini Sweet Peppers, sliced
▫️4 large Handfuls Baby Spinach, sliced
▫️Cherry Tomatoes, halved
▫️Vegan Parmesan Cheese (@followyourheart)

How To
▫️Cook your pasta per package instructions. Drain & add back to pot. Add enough pesto to evenly coat your pasta. I used roughly 4 spoonfuls. Sprinkle just a little salt.
▫️In a cast iron skillet, add in all of your veggies (except for the tomatoes) & sauté in EVOO. Sprinkle with salt & pepper. Cook for roughly 5 mins.
▫️Put everything together! Sprinkle with Parmesan cheese, red crushed pepper & garnish with basil leaves.

▫️Combine all of your ingredients together (but the toppings) in a microwave-safe bowl & heat up for 1 1/2 mins.
▫️For your caramelized bananas, slice 1 in half & lay face-down in a cast iron skillet with avocado oil & cinnamon. Cook on each side for 1 min.
▫️Then add in all of your toppings & enjoy your super nourishing oat bowl

▫️In a high speed blender, add in all of your ingredients. For the vanilla bean, cut in half & use the back of a spoon to scoop out all the flesh.
▫️Blend until creamy & add to a bread pan. Smooth until even & freeze for at least 2 hours before enjoying!

▫️1/2 can Crushed Tomatoes
▫️1/2 can Tomato Paste
▫️4 Pasture Raised Eggs (@vitalfarms)
▫️Protein Bread (@heb)

How To⁉️
▫️Add the frozen veggies to a cast iron with some EVOO. Sauté for 3-4 mins.
▫️Add in your crushed tomatoes & tomato paste. Simmer for roughly 5 mins.
▫️Create 4 holes & crack in your eggs. Cover with a lid & cook for another 5 mins, or until whites are fully cooked).
▫️Toast your bread in a toaster oven.
▫️Serve with some fresh cilantro & avocado if you have some (I was all out ).

My second time trying vegan Italian sausage & I am lovin’ it!  So filling & packed with protein. Definitely my new favorite addition to meals  I typically don’t eat food that resembles meat  but I’m slowly warming up to it as it’s so tasty!  Bought some vegan sausage at Aldi yesterday & made a salad wrap for lunch!  Must try!

How To⁉️
▫️Slice your sausage & as to a cast iron with some EVOO. Cook on each side for roughly 5 mins. No seasoning required & be careful not to overcook!
▫️Heat up your tortilla in a pan until slightly brown on each side.
 To your tortilla, spread some hummus, add your salad mix & chopped veggies, & then lastly top with your sliced sausage. Wrap up & slice in half!

How To⁉️
▫️Preheat oven to 425°.
▫️Start off by washing your veggies. Then cut your mini sweet peppers length-wise. Slice your zucchini, avocado, & radish.
▫️In a large sheet pan, lay in some aluminum foil. Add your baby broccoli, zucchini, & peppers. Spray with avocado oil & season with your spices. Flip over & repeat to the other side.
▫️Cook in the oven for 10 mins. Remove the broccoli, & cook for another 5 mins.
 In a large salad bowl, lay in a bed of greens. Add in your avocado, roasted veggies, radish slices, and dollops of hummus. Sprinkle with sesame seeds.

It’s FRY-day  And I’m celebrating with these super healthy kimchi fries!  It’s been a busy day today apartment hunting  Finally getting a chance to post these super tasty fries! Beware, they are spicy but sooo delicious  Also, did you know kimchi is EXCELLENT for your gut? #guthealth ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Sweet Potato Fries:
▫️2 small Sweet Potatoes, crinkle cut
▫️1/4 cup Arrowroot Starch (@bobsredmill)
▫️2 tbsp Avocado Oil
▫️Spices - Garlic Powder, Smoked Paprika, Salt
Kimchi Layer:
▫️1 cup Spicy Kimchi (@milkimchi)
▫️2 tbsp Coconut Sugar (@bigtreefarmsbali)
▫️1 tbsp Soy Sauce (@kikkomanusa)
▫️1 tbsp Apple Cider Vinegar
Cilantro Dressing:
▫️1/4 cup Greek Yogurt (@siggisdairy)
▫️2 tbsp Sriracha
▫️2 tsp Cilantro, finely chopped

How To⁉️
▫️Fries: Prep your sweet potato by slicing them. I had a crinkle cutter so I used that, otherwise regular slice or wedges works too. Add to a large bowl & evenly mix in the remaining ingredients. Then in two batches, cook in an air fryer for 15 mins at 400°. Every 5ish mins, take out & toss. Add to a large plate.
▫️Kimchi: Add all your ingredients to a sauce pan & cook evenly for 5-6 mins. Leave on low heat until you finish preparing everything else.
▫️Dressing: Use an immersion blender (or just a fork) & mix in your ingredients for the dressing.
 Add the Kimchi layer on top of your crispy sweet potato fries. Then drizzle with the cilantro dressing. Sprinkle with more fresh cilantro. Definitely has a quick but super tasty!

Happy 4th of July  My first Independence Day as an official America citizen  Hope you all celebrate with good food & good company  I’ll be enjoying these refreshing & healthy  popsicles in this Texas summer heat ️

Red Layer:
▫️4 large Strawberries
▫️5-6 Raspberries
▫️1 tbsp Maple Syrup (@lakantosweetener)
White Layer:
▫️1/2 cup Coconut Milk (@goyafoods)

Blue Layer:
▫️1/2 cup Blueberries
▫️1/4 cup Unsweetened Almond Milk (@silk)

How To⁉️
▫️In a blender, mix together all the ingredients for the red layer. Pour into your molds. Make sure to only fill it up 1/3rd of the way. Add the popsicle stick & freeze for at least 2 hours.

Why haven’t I ever thought of this before!?  Had some left over bell pepper & thought  why not crack an egg in these? Best decision ever! The flavor of the egg paired with the bell pepper was phenomenal  Also, I honestly don’t think I’ll ever get tired of making my favorite sweet potato hash for breakfast  Literally make it once a week  LOL ready for this 4 day weekend! 🇺🇸

▫️2 slices of Yellow Bell Pepper
▫️2 Pasture Raised Eggs (@vitalfarms)
▫️1 small Sweet Potato
▫️1/2 Avocado, sliced
▫️Spices - Cumin, Garlic Powder, Chili Powder, Smoked Paprika, Salt & Pepper

How To⁉️
▫️Begin by cleaning & poking holes in your sweet potato. Then heat in the microwave for 1 min to soften. Let it cool, then cut into cubes.
▫️In a pan, add avocado oil & your diced SP, seasoning with your spices. Cook for 6-8 mins, or until they start to get crispy.
▫️For your egg nests, prep your bell pepper & add to a pan with EVOO. Carefully crack in an egg into each bell pepper. Cover & cook until egg whites have set.
▫️Serve everything together in a plate & season with Everything Bagel Seasoning, salt & pepper.

Anyone know what today is...?  #TacoTuesday ofc!  I love making tacos because there are so many things you can stuff them with!  Finally found these crunchy tacos at my Whole Foods & they are A-MAZING  Grain-Free never tasted better! They’re still crunchy & hold up SO WELL!

▫️2 Crunchy Tacos (@sietefoods)
▫️Refried Black Beans
▫️Onion, sliced
▫️Zucchini, cubed
▫️Mexican Shredded Cheese
▫️1/2 Avocado, cubed
▫️Yellow Bell Pepper, diced
▫️Tomato, diced
▫️Baby Spinach, chopped
▫️Salsa con Queso (@sprouts)
▫️Spices - Chili Powder, Salt & Pepper

How To⁉️
▫️Empty out your beans in a small pot, add some water & heat up for a few mins. Season with your spices, to taste. Once fully warmed, leave of very low heat while you cook everything else.
▫️Prep all of your veggies.
▫️In a pan, sauté your onions & zucchini in EVOO until caramelized. Season with salt & pepper. Set aside or leave on very low heat.
 Build your tacos! In your taco shell, add in your beans, sautéed veggies, topped with freshly chopped bell pepper, tomatoes, & spinach. Add dollops of queso & sprinkle in some cheese. Serve with avocado on the side.
