1⃣ PROTEIN TROPICAL YOGURT
1 cup frozen tropical fruit
3/4 cup full fat Greek yogurt
1 tbsp chia seeds
1/3 cup almond milk or milk of choice

2⃣HOT or COLD OATMEAL
This recipe contains some of my favorite oatmeal toppings including: almond butter, dark chocolate chips and fruit!

3⃣PROTEIN EGG MUFFINS
6 eggs, 1/4 cup pepper, 1/4 cup feta, 2 tbsp onion, 3 tbsp sun dried tomatoes. Combine ingredients then place in 6 greased muffin tins and bake at 350F for 20-25 minutes.

4⃣ OATMEAL BALLS
1/2 cup peanut butter, 1 cup oats, 1/3 cup seeds.
Place all ingredients in a bowl, mix and form into balls. Place in covered container and put in fridge for up to 1 week!

5⃣SMOOTHIE BOWL RECIPE
Greek yogurt, milk, fruit, coconut, granola, nut butter and seeds is a delicious recipe high in protein

Sis, me either. I’m more of a chow down, clean plate club kinda girl.

BUT

I’m also a BIG believer in dessert for breakfast, convenience, and fueling my body.

Insert this lil cup of goodness.

I honestly don’t even like to call it a “shake” because I really don’t think that word does this stuff justice. It’s the first thing I reach for every morning and my go-to when the sweet tooth starts to kick in. I use it to make pancakes, mug cakes, reeses cups, and so much more. I thank it every day for bringing my hair back to life and helping me regain control over my cravings.

Shakeology is my savior.

It takes no time to throw together, it’s PACKED with all the nutrients my body needs, it ACTUALLY keeps me full until lunch (and y’all, I’m a HUNGRY girl), and it tastes like a milkshake (no nasty protein shake texture?!- yes please!).

Ok, how many of you eat pb by the spoonful? 🥜 Peanuts get a bad rep. But like anything, they’re actually fine for most people to consume in moderation. The problem begins when you don’t buy organic. Peanuts are way over-grown & over-processed here in the US & tend to be sprayed with pesticides, which is one of the many reasons why you want organic.

Another reason: the ingredients ️ Please read the ingredients of our country’s beloved Skippy 🧐 it contains peanuts, and oh! It’s gluten-free, that must mean it’s healthy. NO. Put the Skippy down.

You want pb that contains ONE ingredient: dry roasted peanuts 🥜 preferably organic. [And yes, the photo on the left is almond butter, because I still recommend everyone choose almonds over peanuts. With that said..I’d still choose almonds & almond butter, over peanuts. This is an ideal breakfast. Veggies ️ fruit ️ protein ️ fat ️ carbs️ fiber ️ nutrient rich ️ TASTY ️processed food . I usually don’t demonize food.. but sugary cereal and breakfast bars might be the worst food suggestion we’ve suggested for a “complete” meal. 
Ingredients: 2 eggs, 1/2 c sauté peppers, onions, kale in olive oil. 1/2 avocado 🥑. Trader Joe tomato bruschetta for a punch of flavor. 1/3 c berries and 1 kiwis. Macros: 444kcal, 31g CHO, 9g Fiber , 17g protein, 31g fat.

What a nice meal! Salad leaves, baby tomatoes, cucumber wedges, peppers and boiled asparagus along with some lentil pasta, corn and black bean burgers and low fat yogurt sauce - yuuuum! Definitely recommend these burgers they were suuuper delicious ( recipe from @cookingforpeanuts ). I’m gonna take my bike and go to the grocery store now to buy some snacks for my movie night with my lil sis.  Enjoy your Friday evening!

Wow, do I wish I was enjoying these crispy, tender fries right about now! They are bursting with crazy, delicious fall vibes, and I can’t get enough

Loaded Sweet Potato Fries
•1 medium sized sweet potato •1/4 tbsp of avocado oil
•1/2 tsp of cinnamon
•1/8 tsp pink salt
•2 tbsp of almond butter
•1/2 tbsp of agave
•1 1/2 tbsp of sunflower seeds
•1 tsp each of chia, flax, and hemp seeds
•2 tbsp of granola .
Preheat the oven to 400°. Cut the sweet potato into 1/2 inch thick fries. Toss with with oil, cinnamon, and salt. Line a baking pan with parchment paper or coat with non-stick spray and add the seasoned sweet potato fries. Bake for about 35 minutes, or until fork tender. Arrange the fries onto a plate, and pour on those topping (almond butter, agave, sunflower seeds, chia seeds, flax seeds, hemp seeds, and granola)

Happy Fridayyy! Today has been a GOOD day so far! It’s finally getting cooler outside so my boyfriend and I took the dogs on a walk around the art district of Tallahassee and stopped at my favorite place to get the best latte ever (2 days in a row).

Falafel Friday!

I whipped up a quick batch of falafel for lunch today. This recipe is insanely flavorful & simple to make! I paired it with @traderjoes Cruciferous Salad & a little Tahini & Lemon Drizzle!

Falafel Recipe:
1 can chickpeas, rinsed & drained
1 tbsp minced garlic
1/4 cup diced onion
2 tbsp chopped fresh parsley
1 tsp cumin
1/2 tsp dried oregano
1/4 cup whole wheat bread crumbs
1 tbsp olive oil
1/4 tsp salt
1/4 tsp pepper
Blend in a food processor until completely mixed

Form tablespoon scoops of the mixture into balls. Heat a small pan (I used an egg pan) on the stove to medium & pour in 2 tablespoons of olive oil. Fry in the pan until all sides are browned & serve!

We were recently speaking about whole grains, here's one #recipe you can try! Garden Veggie Buddha Bowl with Lentils and Tahini Sauce.

Bowls containing an assortment of toppings atop #wholegrains are extremely popular these days. You can put this one together using frozen or leftover brown rice. The lentils can also be cooked ahead as well. While it is tasty hot, it’s also delicious cold – whatever your preference. 
Ingridients for the #Tahini Dressing: 
3 tbsp (45 mL) tahini (sesame paste) 
3 tbsp (45 mL) rice vinegar 
3 tbsp (45 mL) canola oil 
1 tsp (5 mL) grated ginger 
1 garlic clove, minced 
3 tbsp (45 mL) boiling water 
Salt and pepper 
Ingredients for the Bowl Base: 
2 cups (500 mL) cooked brown rice 
1 cup (250 mL) cooked black (Beluga) or green lentils 
3 tbsp (45 mL) chopped dill 
Salt and pepper 
2 cups (500 mL) thinly sliced baby spinach 
1 cup (250 mL) thinly sliced red peppers 
1 cup (250 mL) grated carrots 
1 cup (250 mL) enoki (long thin white mushrooms) or sliced mushrooms 
½ cup (125 mL) pumpkin seeds 
Instructions:
1. Tahini Dressing: Whisk together tahini, vinegar, oil, ginger, and garlic until smooth. Add boiling water to thin out. Season with salt and pepper to taste. Set aside. 
2. Bowl base: Toss hot rice and lentils with dill in a bowl. Season with salt and pepper to taste. Divide equally among serving bowls. 
3. Divide spinach, red peppers, carrots, mushrooms, and pumpkin seeds on top of lentil blend in bowls. 
4. Drizzle dressing on top of veggies and serve immediately.

We tasted the “Belgian Speculoos” (cookie dip with cinnamon pretzels), I took a bire, rest was gulped down by my hungry beast (aka son). Chicken Piccata  
I can’t stop seeing pics of people visiting Positano and the Amalfi Coast, and I’m beyond envious . So, while I sit tight and patiently wait for my turn, I thought I’d cook a dish I imagine and hope to stuff my face with when I visit.

Chicken Piccata is easy to make and in my opinion, a perfect recipe for stay-at-home dinner date, you know w/ glass of wine . There’s an idea. You’re welcome! 

I meant to follow Giada De Laurentiis’ recipe but I forgot the chicken stock and instead used white wine (that’s always in stock 🤪). Nonetheless, it turned out amazing! Here’s my take.

Ingredients:

2 boneless & skinless chicken breasts, cut lengthwise
All-purpose flour
4 tbsp unsalted butter
2 tbsp Olive oil
1/2 cup white wine
1/3 cup fresh lemon juice
1/3 cup capers (do not include brine)
Fresh parsley
Salt and pepper

Season chicken with salt and pepper, and lightly dredge in flour.

In a large frying pan, over medium heat, add olive oil and 2 tbsp of butter. When it starts to bubble, add chicken and cook for 2 to 3 minutes each side or until browned. Remove from the pan and set aside.

In the same pan, add lemon juice, white wine and capers. Bring to boil. Return chicken to the pan and simmer for 4 minutes. Add remaining butter and simmer for another 2 minutes. Sprinkle with fresh parsley.

I served mine with simple mashed potatoes and garlic green beans.

is what I like to call this meal... Honestly had no idea what I wanted & I had a bunch of veggies I needed to use up  So here is the outcome ‍ ‘Twas pretty tasty though & super simple. Not all meals have to be elaborate & well thought out to taste good!

 1) 4-5 small red potatoes boiled in water for 15 mins. Then crisped on all sides in a cast iron skillet with avocado oil. Seasoned with garlic powder, salt & pepper. 2) Tempeh sliced & crisped in a cast iron with olive oil & soy sauce until brown on both sides. 3) Sliced eggplant & squash grilled in a pan with avocado oil. Seasoned with salt & pepper. 4) Spinach, Arugala, & Herb mix.

Getting in a late start this morning...and by ‘late’, I mean waking up at noon ‘late’  Was craving all the carbs & runny eggs  So I spiralized some sweet potatoes & cracked in some eggs  Body is sore from my #lagreefitness workout from yesterday  But feeling good

Deets
▫️1 small Sweet Potato, spiralized
▫️2 Pasture-Raised Eggs (@vitalfarms)
▫️1/2 large Avocado, sliced
▫️Spices - Cumin, Garlic Powder, Smoked Paprika, Garlic Powder, Salt & Pepper
⠀⠀⠀⠀⠀⠀⠀⠀⠀
How To⁉️
▫️Spiralize your sweet potato. Then add to a pan with a little bit of EVOO. Stir for about a minute before adding in your spices. Cook for another 2-3 mins.
▫️Create a hole in the middle & crack in two eggs. Cover with a lid & cook until egg whites have set.
▫️Serve with sliced avocado & fresh cilantro. Topped with Everything But The Bagel Seasoning.

I kid you not when I tell you that the only thing getting me through the day ⏰, is knowing these Twix bars are waiting for moi in the freezer for me... Chocolate Layer:
▫️1 Signature Dark Chocolate Bar (@evolvedchocolate)
▫️Pinch of Himalayan Pink Salt

How To⁉️
▫️Shortbread Layer: Preheat oven to 350°. Mix all ingredients together in a large bowl. Line 8x8 baking dish with parchment paper & pack down mixture into base. Bake for 10-12 minutes, or until golden brown. Remove once done & place in fridge for 15 mins to let it cool.
▫️Caramel Layer: Mix all ingredients together in a small saucepan over the stove on med-low heat & cook until liquid (~about 2-3 min). Remove from burner & add to your shortbread layer. Place in freezer for at least 2-3 hours.
▫️Chocolate Layer: Place a large saucepan with water on medium heat. Break up your bar into a smaller sauce pan & place inside the large saucepan. Stir until chocolate has completely melted. Remove your dish from the freezer & pour the chocolate on top. Move fast to spread it evenly as it will harden quickly. Sprinkle with pink salt. Place back in the freezer for another 15 mins before cutting.
▫️Store in the freezer for up to several months! But it definitely won’t last long

Trying to eat as many peaches as I can before they go out of season  So I threw in some slices, along with some other goodies, into a DH Smoothie  Hope y’all have a wonderful #HumpDay

 1 container Mango + Papaya Smoothie (@dailyharvest) with half a peach, peeled, added to a high speed blender. Added with Natural Protein Powder (@nuzest_usa), 1 tbsp each of Hemp Seeds (@manitobaharvest), Flax Seeds (@bobsredmill) & Ground Chia Seeds 🧂
